Atlantic Cod with Mango Salsa

Description
A fresh, zesty way to prepare this delicious, mild white fish.
What You Need:
- 1 diced mango
- 2 sliced cucumbers
- 1 lime (juiced)
- 1 lemon (juiced)
- 2 Tbsp fresh basil
- 2 tsp Paprika
- 1 green onion
- salt & pepper
- 4 chopped Roma tomatoes
- 4 Atlantic Cod Fillets 6-8 oz
- 1/4 cup vegetable oil
Directions:
Combine the mango, tomatoes, half of the cucumber, lime juice, lemon juice, and basil in a bowl. Preheat oven to high heat. Season the Cod fillets with salt, pepper and paprika. Brush the Cod fillets with the vegetable oil. Broil the Cod fillets about 3 mins per side. Serve Cod over remaining cucumber slices and top with mango salsa. Garnish with green onions.
