Black Cod with Roasted Veggies

Toppits Black Cod is a tender and flaky fish that is delicious and versatile. It pairs well with different herbs and spices, but it is just as delicious sprinkled with some salt & pepper and olive oil. Black cod is easy to work with and is a great lunch or dinner staple.


Serving: 4



Ingredients:

3-5 yellow potatoes (depending on size)

1 yellow onion or 3-4 shallots

1 cup broccoli florets

1 cup cauliflower florets

1 lemon


Fish Seasoning:

1/4 cup olive oil

Salt & pepper to taste

2-3 tsp herbs (we used a rosemary & thyme mix)

Juice of half a lemon


Veggies Seasoning:

1/4 cup olive oil

Salt & pepper to taste


Directions:

  1. Thaw the Toppits Black Cod Portions per instructions on the bag. Once thawed, pat dry and coat with seasoning. You can marinate the fish for up to one hour in the refrigerator.

  2. Chop all veggies and coat with olive oil mixture. Adjust salt and pepper to taste

  3. Roast your veggies in the oven for 30-40min at 400 °F on a large baking pan so that they are not overcrowded. Flip veggies about half way to ensure even roasting on both sides.

  4. Place Toppits Black Cod Portions onto a baking sheet skin side up. Roast in the oven for 12-15min at 400 °F or until an internal temperature of 158 °F (70 °C) is reached. Let rest for 2min.


Cooking Tip: Cut potatoes in smaller pieces as they will take longer to cook than other veggies. You can use other fresh vegetables of your choice.
