Dill and Panko Crusted Salmon

There are so many ways to top your salmon portions. This recipe was created by homecook and foodie Alicia Henri (Instagram). Enjoy the deliciously fresh, citrus-like taste of dill with a crispy panko bite.


Serving: 4

Prep Time: 5 minutes

Cook Time: 20 minutes


Ingredients:

1/2 of panko breadcrumbs

2 tbsp of lemon juice

2 tbsp of olive or canola oil

4 tbsp of chopped fresh dill

1 tbsp of lemon zest

Directions:

  1. Preheat oven to 350 degrees°F.

  2. Mix panko, lemon juice, olive oil, dill and zest together. Mix well.

  3. Place filets on parchment paper covered baking sheet. Divide the amount of panko mixture in 4 portions. Place over each filet.

  4. Bake fish for 15 -20 min. Salmon must be cooked to an internal temperature of 158°F (70°C).

  5. Cover each filet with salt and pepper and serve with your favourite side dish.
